ANTIOXIDANT AND ITS MANUFACTURING METHOD, AND FOOD AND DRINK CONTAINING ANTIOXIDANT

PROBLEM TO BE SOLVED: To provide an antioxidant exhibiting excellent antioxidation properties by a simple process by subjecting a catechin compound or a procyanidin compound to heating when the catechin compound and/or the procyanidin compound is used as an antioxidant against oxidation of a lipid of a living organism. SOLUTION: The antioxidant comprises as an effective ingredient a heat-treated product of the catechin compound and/or the procyanidin compound. The catechin compound is one or two selected from the group consisting of catechin and epicatechin. The procyanidin compound is desirably procyanidin B2. The heat-treated product is desirably obtained by heating between 150°C and 220°C. The manufacturing method thereof is also provided. Foods and drinks containing the antioxidant are also provided.
