Brine-pickled cheese mixture that can be enclosed in the form of a loaf in a sheep intestinal casing, comprises a mixture that can be enclosed in the form of a loaf in a sheep intestinal casing, which is essentially composed of dry brine-pickled cheese with a granulation of approximately 3-5 mm to which approximately 10 vol.% of vegetable oil is added to form a less viscous pasty mixture. An independent claim is included for a procedure for manufacturing of the brine-pickled cheese mixture (sheep cheese, goat cheese or the like) that can be enclosed as a loaf in sheep intestinal casing, comprising: preparing a sufficiently dry brine-pickled cheese base material by draining off the brine; producing a granulation size of the brine-pickled cheese of approximately 3-5 mm; mixing the granulated brine-pickled cheese with sunflower oil by a slow kneading/mixing process to form a less viscous pasty mixture; forming loaves of the mixture in sheep intestinal casings; and smoking the cheese enclosed in the casings in cold smoke.
