METHOD FOR PRODUCING CAROTENOID-CONTAINING PULP

PROBLEM TO BE SOLVED: To provide a method for producing carotenoid-containing pulp by which carotenoid falling in Citrus, particularly β-cryptoxanthin falling in the juice of Citrus Unshu (mandarin orange) can be efficiently condensed in a simple process.

SOLUTION: The method for producing carotenoid-containing pulp comprises the following process: a process of diluting condensed juice obtained by condensing Citrus fruit into Brix 10.5-11.0; a process of heating the diluted fruit juice for sterilization; a process of adding enzyme to the cooled sterilized fruit juice for enzyme treatment; a process of subjecting the enzyme treatment solution after treated to centrifugal separation to separate the solution into a pulp part and clear supernatant liquid; and a process of heating the separated pulp part to inactivate the enzyme and subjecting the heated pulp part to hot-pack charge. The separated pulp part may be dried into powdered one through addition of highly branched cyclic dextrin.
