<P>PROBLEM TO BE SOLVED: To provide a method for producing soybean broth free from having green bean smell, astringent taste, and bitter taste, excellent in feeling in the throat and producing no waste through using all nutrients which soybeans contain without performing husk-removing treatment or husk and embryo-removing treatment, and to provide the soybean broth of high concentration. <P>SOLUTION: This method for producing the soybean broth comprises a process of grinding raw material soybeans through bringing into contact with wash water, a process of soak treating the soybeans wet ground in the process, a process of heat treating in a heating/pressurizing condition the soybeans which are obtained in the soak treatment process and absorb water and swell, and a process of pulverization treating the softened soybeans obtained in the heat treating process while adding water. <P>COPYRIGHT: (C)2007,JPO&INPIT |
