METHOD FOR PRODUCING COENZYME Q10-ENRICHED RICE MALT AND COENZYME Q10-ENRICHED FOOD PRODUCED BY USING THE RICE MALT

PROBLEM TO BE SOLVED: To provide a method for increasing the quantity of coenzyme Q10in rice malt, concretely a method for producing rice malt having high coenzyme Q10content (CoQ10-enriched Aspergillus oryzae) and a food produced by using the CoQ10-enriched rice malt obtained by the method.

SOLUTION: Aspergillus oryzae is inoculated in a starchy raw material and cultured in the presence of malic acid and at least one amino acid selected from phenylalanine, tyrosine, glutamic acid, serine and alanine.
