<P>PROBLEM TO BE SOLVED: To provide a method for increasing the quantity of coenzyme Q<SB>10</SB>in rice malt, concretely a method for producing rice malt having high coenzyme Q<SB>10</SB>content (CoQ<SB>10</SB>-enriched Aspergillus oryzae) and a food produced by using the CoQ<SB>10</SB>-enriched rice malt obtained by the method. <P>SOLUTION: Aspergillus oryzae is inoculated in a starchy raw material and cultured in the presence of malic acid and at least one amino acid selected from phenylalanine, tyrosine, glutamic acid, serine and alanine. <P>COPYRIGHT: (C)2007,JPO&INPIT |
