<P>PROBLEM TO BE SOLVED: To provide fructan-containing fermented food obtained by utilizing fructan-nonfermentable lactobacillus so as to have both of fructan and lactobacillus as active ingredients; and to provide a method for producing the fermented food. <P>SOLUTION: The fructan-containing fermented food is obtained through the following process; inoculating fructan-nonfermentable lactobacillus impossible to ferment the fructan to a fructan-containing edible plant body to establish microbial environment where the fructan-nonfermentable lactobacillus is superior so as to suppress decomposition of the fructan to ferment the food.
