Preparation of concentrates of lutein from products of plant origin involves successive washing of plant extract with aqueous solutions of alkali and acid, saponification at high temperature between 140-180[deg]C, heat treatment in aqueous medium for a prolonged period, washing with organic solvents of modified acidity, drying and optionally mixing with adjuvants or auxiliary agents appropriate to the concentration of xanthophylls.
