The present invention provides the use of a cyclic or polycyclic musk bearing an aldehyde group, which oxidises in an aqueous environment to provide a carboxylic acid having a LogP value of 3.0 or less as a flavour or fragrance. Musks suitable for use in the invention include those of the formula (I) wherein the or each R<SUP>13</SUP> is independently a straight or branched chain, saturated or unsaturated hydrocarbyl group or alkoxy group having from 1 to 8 carbon atoms and/or two groups R<SUP>13</SUP> together with the carbon atoms to which they are attached form a five or six membered ring which may be saturated or unsaturated (including aromatic) and which may be optionally substituted with from 1 to 8 straight or branched chain, saturated or unsaturated hydrocarbyl groups having from 1 to 8 carbon atoms; and x is from 1 to 5. Compositions, products, preparations and articles containing these musks are also provided, as are methods of imparting a flavour or fragrance. |
