摘要 <P>PROBLEM TO BE SOLVED: To provide a new method for producing soybean curd having desired flavor through using raw soybean flour, wherein grassy smell derived from soybean is regulated to make the soybean curd have desired flavor. <P>SOLUTION: The method for producing soybean curd comprises regulating the temperature of whole-grain soymilk when subjecting the raw soybean flour to hydrolysis dissolution to regulate flavor of soybean curd.
