<p><P>PROBLEM TO BE SOLVED: To provide a method and apparatus for producing in a short time crispy pickles which have excellent flavor, about 3% salinity, natural color and homogeneous thickness, from vegetables which are superposed in a plurality of layers in a pickle-making container. <P>SOLUTION: This method for producing the pickles comprises loading a pickle weight stone which has large weight close to the upper limit weight of a pickle weight stone, on the upper surface of a pressing plate-n of a top pickle layer-n in a laminating pickle chamber-n, horizontally placed on the bottom of a pickle-making container, and pouring salt water with about 3% salinity into the upper surface on the pressing plate-n in the pickle layer-n so as to rapidly press vegetables which are lined up without superposing on each the pickle layers of n step in the laminating pickle chamber-n, with the large weight of the pickle weight stone with the pressing plate always retained in a horizontal state by every individual, and dehydrate in a short time to about 40-70% of vegetable weight. As a result of this, the crispy pickles which have excellent flavor, about 3% salinity, natural color and homogeneous thickness are produced before propagation of microorganisms in the salt water with about 3% salinity becomes active even in the summer season when a temperature becomes high. <P>COPYRIGHT: (C)2007,JPO&INPIT</p> |
