For the purpose of determine the quality or amount of an LPS contained in or blended with a product, an attention is focused on a microorganism occurring symbiotically with the food material, a microorganism used for the production of a food or a microorganism used as a food, particularly a gram negative bacterium. Disclosed is a monoclonal antibody which can recognize lipid A in a lipopolysaccharide, a core polysaccharide or an O-antigen polysaccharide contained in the microorganism and therefore can recognize a specific LPS.
