#CMT# #/CMT# The process of maturing wine in a wooden barrel, comprises chemical restoration/renovation of the barrel to regenerate gaseous exchange with wood, filling the barrel with wine at exit of fermentation for maturation of wine, and introducing the wood in the form of pieces, shavings and sticks in the wine contained in the barrel. A quantity of wood is adapted to compensate a defect of restored barrel.
