PROBLEM TO BE SOLVED: To provide a method for a high-speed fermentation treatment of organic waste and a product thereof capable of producing fully-matured sludge compost in a short time by reusing sludge discharged from a food industry. SOLUTION: The method for the high-speed fermentation treatment of the organic waste comprises a crushing process for crushing at least one kind of fibrous biomass selected from the group consisting of rice straws, wheat straws, reeds, corn stalks and leaves, cane stalks and leaves, and kenaf, a mixing process for mixing the organic waste with the crushed fibrous biomass in the crushing process, and a fermentation process for fermenting the mixture mixed in the mixing process by blowing air therethrough. The mixing process preferably includes controlling the moisture content of the mixture. The fermentation process also preferably includes sending the air from the bottom side and discharging the air from the upper side of a fermentation tank, which preferably has a negative pressure therein.
