<P>PROBLEM TO BE SOLVED: To provide a method for purifying yeast extract by which smell peculiar to yeast extract, turbidity caused in a low-pH area and bitter taste are eliminated. <P>SOLUTION: The method for purifying yeast extract comprises subjecting the yeast extract to enzyme treatment, wherein the yeast extract is treated with peptidase having both of end-form and exo-form activities, and then filtered. <P>COPYRIGHT: (C)2007,JPO&INPIT |
