<P>PROBLEM TO BE SOLVED: To provide a method for producing a gellan gum-containing food composition containing 0.002-0.44 wt.% of gellan gum. <P>SOLUTION: The method for producing a gellan gum-containing food composition containing 0.002-0.44 wt.% of gellan gum comprises the following process: (1) a process of admixing a gellan gum aqueous solution (a) with a cation-containing aqueous solution (b) at effective temperature while stirring the mixture at effective frequency; and (2) a process of regulating pH of the mixture at a temperature effective for gel formation while stirring the mixture at a frequency effective for gel formation. <P>COPYRIGHT: (C)2007,JPO&INPIT |
