<P>PROBLEM TO BE SOLVED: To provide a Citrus sudachi pretreating method capable of suppressing occurrence of scald fruits and performing the shortening and controlling of a pretreatment period, and to provide a pretreating apparatus to be used for the method. <P>SOLUTION: This Citrus sudachi pretreating method comprises continuously supplying by differential pressure air which is controlled at 30-40°C and whose relative humidity is dried to <70% using a dehumidifier, to an air permeable container holding Citrus sudachi. The pretreating apparatus is formed by arranging in space sealed with a heat-insulating member, a pretreating chamber RD which holds the container holding Citrus sudachi, a pressure space dS which continuously circulates air by differential pressure to the pretreating chamber RD, and an air conditioning space AdS which temporarily stores circulating air discharged from the pretreating chamber RD. The pretreating apparatus has a differential pressure producing apparatus which is arranged between the air conditioning space and the pressure space, a dehumidifier, and a temperature control means which may be the same as the dehumidifier. <P>COPYRIGHT: (C)2007,JPO&INPIT |
