Provided is a method of manufacturing salted dry fish(Jaban) by washing dressed fish in sea water, deep sea water or salt water, soaking in salt water containing rice bran or barley bran water and salt produced from deep sea water, sprinkling additives containing sucrose or trehalose and aging on stainless steel wire. Fish is removed in scale, viscera, roe, milt and the like, soaked in sea water, deep sea water or salt water for 1 to 2hr to remove blood. Then, the pretreated fish is soaked in salt water containing 3 to 5% by weight of rice bran or barley bran water and 8 to 12% by weight of salt produced from deep sea water for 2 to 4hr. Thereafter, the salted fish is dried on rice straw to a moisture content of 70%, sprinkled with 8 to 12% by weight of salt containing 2 to 10% by weight of additives and aged on stainless steel wire while applying voltage from 1,500 to 5,000 volts and electric current from 10 to 150muA for 4 to 48hr. The additives are sucrose or trehalose as non-reducing disaccharide. |
