A novel formulation with improved resistance to the breakdown and loss of iodine from fortified food components, especially salt, has been developed. The sal t formulation relies on the encapsulation of the iodine compound in a digestible, inert matrix that forms a physical barrier around the iodine compound, and thus prevents reaction of the iodine compound with other components in food, salt or atmosphere, which would otherwise lead to loss of iodine. An especially preferred embodiment is useful in the double--fortification of salt with iodine and iron. |
