The oven has a muffle chamber (1) with a centrifugal convection turbine (9) driven by a motor (10), and annular electrical resistors (12-15) placed at the turbine periphery. The resistors and the turbine are placed in a parallelepiped cavity of the chamber communicating directly with a cooking volume (81), without a separation wall countering infrared radiation and air flow. A control unit (17) controls an electrical energy source supplying the resistors. The source, the unit and the resistors regulate temperature of the oven to 270 degree Celsius during a specific roasting operation stage.
