PROBLEM TO BE SOLVED: To provide a method for producing a crystalline L-carnosin-zinc complex by removing a salt contained in a crude body of the crystalline L-carnosin-zinc complex while keeping the molar ratio of the zinc to the L-carnosin within a prescribed range. SOLUTION: The method for producing the crystalline L-carnosin-zinc complex having≤0.5 mass% content of the salt, and the molar ratio of the L-carnosin to the zinc, substantially same to the molar ratio of the L-carnosin to the zinc in the crude body by removing the salt contained in the crude body of the crystalline L-carnosin-zinc complex containing≥10 mass% salt as an impurity involves a step for selectively dissolving the salt by stirring a dispersion obtained by dispersing 1 pt.mass of the crude body 1 in 5-30 pts.mass of water at 1-30°C, for≥2 hr while keeping the temperature at 1-30°C.
