The product comprises two or more different galactomannans, starch and milk or at least one component thereof. A pourable, pH-neutral, carrageenan-free dairy product comprises (A) at least two different galactomannans, (B) at least one starch and (C) milk or at least one component thereof. The product is in the form of a carrageenan-free cream custard or a carrageenan-free custard-like product, especially a low-fat or half-fat carrageenan-free custard substitute. Independent claims are also included for the following: (1) preparaton of the dairy product by preparing a suspension containing (A)-(C) and optional additional components, gelatinizing (B) and hydrolyzing (A) and optionally pasteurizing or sterilizing the suspension; (2) use of a galactomannan or a combination of at least two galactomannans as a carrageenan substitute in the above dairy product, especially food products intended for children, particularly babies and young children; and (3) use of a galactomannan or a combination of at least two galactomannans as a texturising agent in the above dairy product, especially food products intended for children, particularly babies and young children. |
