The invention relates to a method for obtaining at least one glucosinolate from a root exudate of at least one plant of the Capparales order, comprising the following steps: (a) the plant is cultivated in an earth-free system; (b) a feed solution with an increased nitrogen content is supplied; (c) the glucosinolate formation is stimulated by administering at least one elicitor; (d) the glucosinolate is obtained from the root exudate of the plant. The invention also relates to glucosinolate obtained according to said method and to the use of said substance for food supplements, as a parent or raw material for functional food or as a pharmaceutical.
