<P>PROBLEM TO BE SOLVED: To provide a aging preventing agent for starch intended for solving such problems that starch aging is also an important problem to quality deterioration of food, and each kind of starch aging preventing method is provided to prevent starch aging, but effect of starch aging prevention is not sufficient, and the method affects taste quality and palate feeling of food itself and is complicated. <P>SOLUTION: This starch aging preventing agent shows through adding non-freezing protein and oligosaccharide and/or monosaccharide to a starch-containing product, a starch aging preventing effect higher than in the case of adding each alone.
