An organic product having a high albumen content is prepared by mechanically disintegrating fish flesh or animal flesh and transferring it to a water bath to which cryptococcus fungi of the saccharomyces type i.e. cryptococcus fermentum, torula fermentum or horniscium fermentum are added.
