<p>Maltose is prepared by (a) heating an aqueous solution of starch in order to effect dissolution and total conversion into gel, (b) cooling the gelled starch suspension, (c) mixing the cooled suspension with an alpha-1,6-glucosidase and a beta-amylase, and (d) maintaining the reaction mixture at a suitable pH and a temp. of 45-65 degrees C until the reaction is completed.</p> |
