PROBLEM TO BE SOLVED: To provide a process and equipment for making pizza with the high-temperature and short-time heating by using a plate heated by a ceiling type grill as an oven and accumulating the heat. SOLUTION: (A) Convert an up-heat source grill in to high temperature oven. A dark plate is placed instead the grid or over the grid. The plate absorb heat by the up-source grill. (B) Procedure to make a dough without touching it. The knead-baking bag system will allow to make easy and clean dough. This procedure allow to process very small quantity with perfect results. Mix ingredients, knead, baking, make baked dough balls, clean, easy, fast. (C) Knurled cooking aluminium sheet. Cook the pizza without direct contact to the hot plate. (D) Pastry sheet thickness feeler. (E) Handle free, open hand spatula. Coordinate tool to (A). It is used to place the pizza over the plate that sliced out is.
