KOJIBIOSE PHOSPHORYLASE, METHOD FOR PRODUCING THE SAME, AND APPLICATION THEREOF

PROBLEM TO BE SOLVED: To provide a new enzyme of kojibiose phosphorylase, a method for producing the enzyme, a glucide containing a glucosyl-transferred saccharide obtained by utilizing the enzyme, and application thereof.

SOLUTION: The new enzyme has kojibiose phosphorylase activities. The DNA encodes the enzyme. The method for producing the enzyme comprises culturing microorganisms producing the enzyme in a nutrient medium, and collecting the produced enzyme from the cultured product. The glucide containing the glucosyl-transferred saccharide is obtained by reacting the enzyme with β-D-glucose-1-phosphate and other glucides. The composition contains the glucide containing the glucosyl-transferred saccharide.
