A method of extracting red ginseng is provided to offer raw material for cosmetics, face wash products, medical products and the like by heating red ginseng powder with aqueous-ethanol solutions to reduce oxidation of maltol components contained in the red ginseng. The method comprises the steps of grinding red ginseng finely(S100); adding 55 to 70% aqueous-ethanol solutions to a heating tank(S200); heating the heating tank at 75 to 85deg.C for 1 to 2hr and cooling it(S300,S400); repeating extraction and cooling steps 3 times(S500); obtaining concentrated extracts by extracting and concentrating the red ginseng extract at 75deg.C under reduced pressure after filtering(S600).
