Preserving eggs comprises depositing a homogeneous composition containing a zeolite and metal ions on the eggshells. Independent claims are included for: (1) a composition, useful for the above process, comprising a zeolite, metal ions and an adhesive compound allowing to adhere the zeolite on the eggshells; and (2) an assembly for the process comprising a device for convoying the eggs and for homogeneous application of the composition on the eggs.
