<p>A free flowing-powdery baking agent comprises a diacetyl tartaric mono/difatty acid glyceride of formula: in which R is a saturated or unsaturated C12-C24 fatty acid radical, and R' is a hydrocarbon or a saturated or unsaturated C12-C24 fatty acid radical, in which a melted mixture of fat and glyceride has finally divided flour and/or starch and/or castor sugar stirred into the melt. The baking agent is esp. used for making white bread, giving a soft, springy, fluffy crumb.</p> |
