<P>PROBLEM TO BE SOLVED: To provide scallop adductor-like fibrous boiled fish paste having not only flavor but also appearance, especially tone of color the same as that of real scallop adductor. <P>SOLUTION: A method for producing the scallop adductor-like fibrous boiled fish paste which has as the main raw material fish meat paste comprises as essential processes, a process of addition of an additive so as to bring the total free amino acid contained in the additive to 0.1-5.0% of the total wet weight of the raw material, a process of addition of saccharoid so as to bring the total xylose and/or glucose as saccharoid to 0.05-5.0% of the total wet weight of the raw material, and a heating process at 80-100°C for 30-60 min of causing Maillard reaction by free amino acid and saccharoid contained in the raw material. The tone of the scallop adductor has a flesh color whose L*, a* and b* measured with a color-difference meter is 65-72, -3.0 to 1.0 and 5.0-15.0 respectively.
