PROBLEM TO BE SOLVED: To provide a method for speedily and surely producing optical interference fiber while automatically maintaining both high reliability and good stability for the fiber's color development abnormality without relying on manual operation requiring long time and much labor. SOLUTION: The method for producing the optical interference fiber comprises the following process: Conjugate fiber with optical interference comprising alternate laminates consisting of thin films of two polymers differing in optical refractive index from each other in parallel with the fiber axis is spun and then drawn and wound as a filament yarn package. In this process, the reflected light from the filament yarn package 7 revolving during or after winding is subjected to spectrocolorimetry to determine the color development wavelength value of the filament yarn package 7 and the deviation from a target color development wavelength value is calculated, and the quantity of the polymer extruded via a conjugate spinneret is put to feedback control so as to eliminate the above deviation.
