Production of foamed milk from powdered milk (7) and hot water comprises spraying uniformly distributed streams of hot water (4a, 4b, 6) under pressure on to the powder. Independent claims are included for: (A) apparatus for carrying out the method comprising a spray head (1a) with a set of jets around its circumference and a second set near its center, the spray head being connected via a water supply pipe (17) to a heater and pressurizing unit; and (B) coffee machines incorporating the foamed milk production apparatus.
