<P>PROBLEM TO BE SOLVED: To provide a composition containing the water soluble chalcones compounds of Angelica keiskei, of which astringent taste and grassy smell are reduced, and a method for producing the same. <P>SOLUTION: This chalcones compounds-containing composition contains a treated material originated from the Angelica keiskei and a surfactant. The food containing the composition, a method for producing the composition containing the chalcones compounds originated from the Angelica keiskei through specific processes, and a method for producing a water-containing alcohol extract of the Angelica keiskei are provided. These compositions and extracts reduced with the astringent taste and grassy smell peculiar to the Angelica keiskei, are water soluble and are extremely suitable for being used as a raw material of a beverage containing the chalcones compounds in a high concentration. <P>COPYRIGHT: (C)2007,JPO&INPIT |
