Provided is derivatives of glycosylated compounds which have increased solubility in water and prevent decomposition or oxidation caused by light or heat so as to be usefully used for foods and cosmetics and medicine industries. The alpha-acarbose derivative is represented by the formula(11) or (12). The nodakenin derivative is represented by the formula(13)(wherein n is 2 to 5). The alcohol derivative is represented by the formula(14)(wherein n is 3 to 5), the formula(16)(wherein n is 3 to 5), the formula(18)(wherein n is 2 to 5), the formula(19)(wherein n is 2 to 5), the formula(20)(wherein n is 2 to 5), the formula(21)(wherein n is 2 to 5), the formula(22)(wherein n is 2 to 5), the formula(23)(wherein n is 2 to 5) or the formula(24)(wherein n is 1 to 5). The quercetin derivative is represented by the formula(25-1) or the formula(25-2). The ferulic derivative is represented by the formula(26).
