PROCESS FOR PRODUCING INDIGESTIBLE DEXTRIN CONTAINING ISOMERIZED SUGAR

A process for inexpensively producing an indigestible dextrin which contains an isomerized sugar and is highly useful in foods and beverages. This process comprises the following step (A) and at least one subsequent step selected between the steps (B) and (C): (A) the step of causing glucoamylase to act on a roast dextrin containing an indigestible ingredient to hydrolyze a digestible ingredient to glucose; (B) the step of adding fruit sugar; and (C) the step of converting part of the glucose yielded into fruit sugar with the aid of glucose isomerase.
