A red pepper boring apparatus designed to bore fine holes in red pepper with needles of a rotating roller during transfer on a conveyor is provided, which automatically makes holes in the red pepper and reduces the drying time of red pepper by about 30 to 50%. The red pepper boring apparatus comprises: a roller(22) with PE wire(21) to arrange and transfer red pepper(1) from a hopper(12) in single-fold without overlapping on a conveyor(15); a perforating roller(24) with a dense needle structure to make fine holes in red pepper with a needle(23) by the rotation; and a counter-rotating roller(25) with PE wire to cause deviation of the red pepper from the needle and falling to the conveyor.
