A salting apparatus with an automatic brine making function for preparing Kimchi designed to produce brine for salting vegetables and to give optimal salting environment at the same time by continuously recycling waste brine of a salting tank is provided, which allows permeation of the brine deep into the vegetables and thus gives uniform salting. The brine-making and salting apparatus for preparing Kimchi comprises: a salting part(30) connected to a brine-making apparatus(20) by a brine recovery pipe and brine supply pipe of a brine storage tank(10); a salting brine supply circuit part containing a supply pump(41), an input pipe connecting the supply pump and a salting tank through the medium of a supply control valve and a final supply pipe supplying brine to each salting tank; a used brine recovery circuit part supplying re-supplied waste brine to the brine storage tank by a brine re-supply pipe and a recovery pump(42) pumping re-supplied waste brine from the brine making apparatus; a brine making circuit part supplying fresh water to the brine-making apparatus and storing the brine onto a brine storage tank; and a control part controlling the on-off control and operation of valves and pumps by a detected signal of a water level sensor of the salting tank and brine making apparatus and a set program. |
