摘要 A method of producing mevinolin by inoculating Monascus seed culture into a bean and fermenting is provided, which produces safe mevinolin containing no citrinin. A bean is inoculated with Monascus seed culture and fermented to produce the titled mevinolin. The Monascus seed culture is at least one selected from Monascus anka, Monascus purpreus, Monascus pilosus, Monascus ruber and Monascus kaoliang. The Monascus seed culture is obtained by inoculating Monascus sp. cultured in potato dextrose agar into a nutrient medium and culturing. The nutrient medium contains 2 to 8(w/v,%) of rice flour, 0.5 to 2.0(w/v,%) of peptone, 1 to 5(w/v,%), glycine and 6 to 20(w/v,%) of glucose and has an initial pH of 6.0±0.5. The bean is selected from a whole bean, bean flour or a processed product thereof.
