<P>PROBLEM TO BE SOLVED: To provide a heat sterilization apparatus preventing occurrence of coagulation defect when heat sterilizing steamed egg custard, while preventing occurrence of overs and shorts of sterilization extent. <P>SOLUTION: This heat sterilization apparatus comprises holding an object 3 to be sterilized in a sterilization tank 7 capable of being pressurized and heat sterilizing the object 3 to be sterilized by heating the sterilization tank 7. The apparatus comprises in the case of heat sterilizing a food material which is liquid before heat sterilizing and coagulated by heating, such as steamed egg custard, pot-steamed hotchpotch and pudding, at first increasing air temperature in the sterilization tank by supplying steam to the sterilization tank, performing a steaming process of retaining a previously set steaming temperature, and then performing a sterilization process of jetting hot water toward the object to be sterilized in the sterilization tank followed by retaining in a previously set sterilization temperature. <P>COPYRIGHT: (C)2007,JPO&INPIT |
