<P>PROBLEM TO BE SOLVED: To provide soybean processed food richly containing inositol and pinitol solving the following problem: in a conventional process for producing soybean processed food where soaking water, boiling water or the like is discharged, inositol such as myo-inositol or kiro inositol and a greater part of pinitol as healthy foods are liquated out in the soaking water composing the cooking water, but not left in the product. <P>SOLUTION: In a soybean soaking process and a soybean processing process in manufacturing the soybean processed food, all or almost of the soaking water composing the cooking water is absorbed in the soy beans. The soybean processed food prevents outflow of the inositol such as the mio-inositole or the kiro-inositol so as to leave respective ingredients in the soybean processed product in high density. <P>COPYRIGHT: (C)2007,JPO&INPIT |
