An ink-jet apparatus and an ink-jet method are provided to continuously dry jetted ink after the ink is jetted. An ink-jet apparatus includes a stage(10), at least one nozzle(33), and a plurality of heating regions(41). A substrate in which a plurality of pixels is formed is positioned on the stage. The nozzle head has a plurality of nozzles jetting ink to the pixels. The heating regions heat the ink so that the ink jetted to the pixels can have a temperature profile. The heating regions correspond to the pixels. A central portion of the temperature profile is convex. The temperature of the heating region corresponding to the center of the pixel is higher than the temperature of the heating region corresponding to the periphery of the pixel.
