PROBLEM TO BE SOLVED: To provide a method for producing rice cracker having as the main raw material rice and/or rice flour, excellent in processing characteristics, enabling stable production of pellet excellent in forming, and excellent in a production shape and palate feeling. SOLUTION: This method for producing the rice cracker having as the main raw material rice and/or rice flour, excellent in processing characteristics, enabling stable production of pellet excellent in forming, and excellent in a production shape and palate feeling comprises including in the main raw material 2-35 wt.% of processed waxy potato starch. It is possible to use oxidized starch, esterified starch, etherified starch or bridged starch as the processed waxy potato starch. It is possible to use a mixture of one kind or at least two kinds of starch selected from the starches, but it is preferable to use especially bridged or acetylated waxy potato starch.
