FIELD: biotechnology, in particular method for lactic acid production based on microbiological synthesis. ^ SUBSTANCE: lactic acid id produced by fermentation of sugar-containing medium with lactic acid bacteria of Lactobacillus delbrueckii strain at age of 48-72 h in presence of 12-15 g/l malt sprout, treated with water acidified with lactic acid to pH 4.0-5.0 and enzyme preparation xyloglucanofoetidinenin amount corresponding to 200-600 U/l of xylanase activity. Said medium contains chalk in amount of 60 % based on total amount calculated for lactic acid neutralization; yeast extract and nutrient salts. As nutrient salts magnesium, manganese, and iron sulfates, ammonium citrate, mono- and disubstituted potassium phosphate. Formed lactic acid is neutralized is carried out over 24 h from fermentation process starting by introducing of 40 % of rest chalk.
