PROBLEM TO BE SOLVED: To provide a heating device capable of deducing a heating state of a heating object with high accuracy; and to provide a boil detection method capable of detecting a boil of the heating object with high accuracy. SOLUTION: This heating device is characteristically equipped with: a heating means 5 for heating the heating object 2; a temperature measurement means 6 for indirectly measuring the temperature of the heating object 2; a timer means 9 for measuring a heating time of the heating object 2 by the heating means 5; a calculation means 10 for calculating a heating state value by using a temperature variation per unit time as a denominator based on the temperature measured by the measurement means 6 and the heating time measured by the timer means 9; and a heating state deduction means 13 for deducing the heating state of the heating object 2 based on the heating state value calculated by the calculation means 10.
