Process for obtaining soya concentrates rich in O-malonylated isoflavones without denaturing nor chemical modification, having an isoflavone content above 10% by weight and a genistein/daidzein ratio identical to that originally present in the source material, and with an almost complete absence of glycitein derivatives, comprising treating dehusked soya seeds with water, ultrafiltration and concentration by reverse osmosis, is new. Process for obtaining soya concentrates rich in O-malonylated isoflavones without denaturing nor chemical modification, having an isoflavone content above 10% by weight and a genistein/daidzein ratio identical to that originally present in the source material, and with an almost complete absence of glycitein derivatives, comprises treating dehusked soya seeds with water to give a liquid that is ultrafiltered to give a soya permeate. This permeate is concentrated by reverse osmosis to give a concentrate rich in extract. This is evaporated under reduced pressure to give a product high in isoflavones. A low-boiling solvent is added and the mixture spray-dried at low temperature to give a powder having an O-malonyl isoflavone content of 28 - 35%. |
