<P>PROBLEM TO BE SOLVED: To provide a raw material of a processed food, which is prevented from losing nutrition derived from fish as the raw material and makes much use of taste and flavor inherited from fish, and to provide a method for producing the raw material of the processed food. <P>SOLUTION: This method comprises removing head, guts and tails from fish as the raw material, followed by dressing, removing up guts by washing the fish in cold water followed by adding a saccharide such as trehalose as a freezing stabilizer, crushing the dressed fish with a silent cutter into dumpling-like cake, and uniformly mixing the freezing stabilizer with fish meat. Furthermore, the method comprises further finely crushing the dumpling-like fish meat uniformly mixed with the freezing stabilizer by a micro cutter into pasty fish meat, and storing the pasty fish meat at every prescribed amount in a container such as a pan and rapidly frozen. <P>COPYRIGHT: (C)2007,JPO&INPIT |
