The invention refers to a method and apparatus for heating and atmospherical ly boiling wort when brewing beer. To optimize the heating and/or boiling process and to obtain an optimum wo rt quality, the heating and/or boiling process is carried out in accordance wit h a target value curve, which is stored in a control means and which can be individually generated by the brewer.
