A defrosting device of a conditioner for baking is provided to prevent workers from receiving an electric shock caused due to the leakage of moisture in a switch unit and an electric wire connecting unit by filling a body with an insulating material and continuously generating heat. In the conditioner for baking, keeping dough for bakery hot and cold, thawing, and fermenting the dough and comprising a storage compartment and a barrier(110) vertically dividing the storage compartment, the defrosting device(1) is composed of a body(10) combined to a front end of the barrier and formed by joining plural cases(11,12); an insulating material(20) filled into the body and attached with a silver paper(21) for preventing the conduction of heat; and a switch unit(30) and a heating unit(40) inserted from the front section of the insulating material with exposing a portion of the surface.
