PROBLEM TO BE SOLVED: To obtain a new acidic heteropolysaccharide that is produced by acetic acid bacteria with historically confirmed safety and is safe and stable and to provide a method for producing the same. SOLUTION: The new acidic heteropolysaccharide is obtained by extracting the supernatant of a culture solution of Acetobacter xylinum NCI1005 strain (FERM BP-10415) with ethanol, comprises glucose, galactose, mannose and glucuronic acid as main constituent components in the constituent saccharide ratio of glucose: galactose: mannose: glucuronic acid of 5:1:1:1.
